Peach Crisp
made with Fresh Milled Flour

My parents brought a gift back from their trip to Alaska. It was a beautiful calendar with photographs of the views and recipes. We used and enjoyed the calendar, as this was long before Google Calendar. That paper calendar is sadly gone now, but we kept this one delicious recipe that we cut out and have made over and over. Traditionally, it was an apple crisp. This is an updated version, with fresh milled flour and a few other updates I hope that it feels like home to you too!

Serving Size: 1 cobbler, (either a 9 or 11 inch pan)
Prep time: Chopping fruit takes the most time, mixing ingredients takes about 5 minutes

Ingredients:
8-10 small peaches
1 cup soft white fresh milled flour (whole wheat flour)
1 cups brown sugar
1 cup old fashioned oatmeal
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/4 pound butter (1 sticks)

Directions:

Dice peaches, remove skin and pits.

Pour peaches into your round pan (either 9 or 11 inches).

In a food processor or large bowl mix: flour, sugar, oatmeal, cinnamon, nutmeg, and salt. Cut in the butter with two knives or a few short bursts on the food processor.

Pour the topping over the fruit and spread across all of the fruit.

Bake 30-45 minutes at 350 degrees.

Check if the fruit is soft with a knife through the crust.

Serve warm.
