Banana Bread, made with Fresh Milled Flour

We have used this basic banana bread recipe for decades in our family. We've made a couple of changes to incorporate fresh milled flour and reduce the sugar. Otherwise, it's the same wonderful breakfast that we have always loved. I hope that your family loves it too.

Ingredients:

¾ - 1 cups sugar (we use less, but you may prefer sweeter bread like we used to make)
1 1/2 cups mashed very ripe bananas (3 medium-ish, I don't measure this part)
1/2 cup apple sauce
1/2 cup (1 stick) butter, melted
2 large eggs
1/2 cup buttermilk (use the real thing)
1 teaspoon vanilla
325 grams (2 ½ cups) spelt flour (soft white would work too)
1 teaspoon baking soda
1 teaspoon salt

Directions:

1. Preheat to 350° and butter the bottoms of two 8.5x4.5 pans (or one 9x5 pan)
2. Mix the bananas and sugar until the bananas are completely blended.
3. Add the remaining wet ingredients and mix.
4. To the same bowl add the remaining ingredients. Mix well, about 1-2 minutes.
5. Bake 8.5 inch loaves for 1 hr or 9 inch loaves for 1.25 hours.
