Granola Bars

We have been making this recipe for years and originally adapted it from a King Arthur recipe. Our family loves to make multiple batches with a variety of "add-ins" so that all of our preferences and granola bar dreams come true. These are perfect for breakfast on the go or an after practice snack.
Ingredients:
1 2/3 cups old fashioned rolled oats
1/2 cup granulated sugar
⅓ cup oats processed in a blender/ food processor, into flour (or mill oat groats in mill)
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1 tsp vanilla extract
1/3 cup peanut butter, melted
6 tablespoons butter, melted
1/4 cup honey
1 tablespoon water
2 to 3 cups add-ins (such as dried fruits and nuts, see list), whole or chopped, chopped as desired
Add in suggestions:
Dried pineapple
Dried cranberries
Dried blueberries
Dried strawberries
Dried apricots
Dried cherries
Dried apples
Dried mango
Coconut flakes, unsweetened
Ground flax seed
Sunflower seeds
Dark chocolate chips, chopped
Mini chocolate chips
Pecans
Almond slivers
Walnuts
Hazelnuts
Pistachios
Our favorite combinations:

Coconut on top, to toast
Directions:
1. Preheat the oven to 350°. Line an 8x8 pan with parchment paper.
2. Mix the dry ingredients, including 2- 3 cups of add-ins.
3. Mix the wet ingredients, melting PB and butter before incorporating.
4. Mix all of the ingredients together.
5. Pour the mixture into your prepared pan, patting it down until evenly spread across the pan with a spoon, wooden works well.
6. Bake for 25-30 minutes or until the bars begin to brown around the edge.
7. Allow the bars to cool about 10 minutes before moving them from the pan to the cooling rack.
8. After cooled, cut them into desired size. Sometimes we make some larger bars and some smaller so that we have options.
9. Bars can be stored on the counter for days, in the fridge for a week, or in the freezer for a couple of months (if they last that long).
