Simple Waffles made with Fresh Milled Flour

These simple and delicious waffles can be thrown together and made quickly on a busy morning leaving your family full and nourished. They are crisp on the outside, soft on the inside, and every bite is delicious.

Ingredients:

275 g (2 cups) spelt
½ tsp salt
½ tsp baking soda
1 tbsp baking powder
2 tbsp honey, estimated
2 eggs
2 ¼ cups buttermilk
½ cup butter, melted
1 tsp pure vanilla extract
canola (or other) oil, to coat the waffle iron

Directions:

1. Mix dry ingredients.
2. Add wet ingredients.
3. Allow batter to rest for 10 minutes, optional, if time allows. More buttermilk can be added if needed, however the batter is best when thick.
4. Preheat the waffle iron and then oil it with a silicone brush.
5. Pour batter into waffle iron and cook as directed. Do not overfill the waffle iron, these waffles expand and rise quite a bit.
6. Remove waffles and serve immediately (or cool without stacking so that they waffles do not get soggy.)

Tips:
1. Waffles can easily be stored in the fridge until the next morning and reheated in the toaster oven.
2. Waffles can be stored in the freezer for weeks and reheated from frozen in a toaster oven.
